The Future of Coffee Grows in the Rainforest

Can the world's favourite beverage help protect the world's most valuable ecosystems?
Coffee is one of the world's most traded agricultural commodities. Every day, more than two billion cups are consumed globally, supporting the livelihoods of over 125 million people and generating more than US$100 billion in global trade. Brazil, Vietnam, Colombia, Indonesia, and Ethiopia together produce the majority of the world's coffee, with global production reaching approximately 177.8 million 60-kg bags in the 2023/24 season. Yet behind every cup lies an industry increasingly under pressure from climate change, biodiversity loss, rising production costs, water scarcity, pests, and volatile markets.
For decades, increasing coffee production often came at the expense of forests. Large areas of tropical rainforest were cleared to establish sun-grown coffee plantations, sacrificing biodiversity for short-term yields. But what if the future of coffee lies in doing the exact opposite?
Coffee Doesn't Have to Cost the Forest
Across tropical regions, a new generation of producers is demonstrating that high-quality coffee and healthy forests can coexist.
Rather than replacing forests with coffee, regenerative systems integrate coffee into biodiverse landscapes. Native trees provide shade, improve soil health, regulate temperature, increase water retention, and create habitat for wildlife. These ecosystems become more resilient to drought, pests, and extreme weather while producing coffees with increasingly complex flavour profiles.
Instead of treating biodiversity as an obstacle to production, regenerative coffee recognises it as one of agriculture's greatest assets.
Why Biodiversity Matters
Healthy rainforests are among the most complex ecosystems on Earth. Thousands of plant species, insects, fungi, birds, mammals, and microorganisms interact continuously beneath the forest canopy, creating natural processes that no synthetic input can replicate.
These interactions influence:
Soil fertility and nutrient cycling
Water regulation and moisture retention
Natural pest control
Pollination
Climate buffering
Long-term ecosystem resilience
For coffee plants, these ecological services may translate into healthier growth, more stable harvests, and potentially higher-quality beans.
This raises an exciting question:
Can greater biodiversity actually improve coffee quality?
Testing a New Hypothesis
At Restore the Legacy, we are exploring exactly this question through two complementary initiatives.
In Bali, degraded coffee monocultures are gradually being restored into biodiverse rainforest-grown coffee systems. Native rainforest trees, organic soil restoration, regenerative farming practices, and specialty coffee production are combined to improve ecosystem health while improving farmer livelihoods.
In West Borneo, we are taking the concept one step further.
Our pilot explores whether coffee introduced into highly biodiverse rainforest environments can demonstrate measurable improvements in flavour complexity, resilience, harvest stability, and long-term value compared with lower-diversity plantation systems. Rather than converting forests into agricultural land, coffee is introduced carefully through enrichment-style planting in community-managed forest landscapes while maintaining ecological integrity.
The objective is simple but ambitious:
Create economic value from rainforest instead of clearing it.
Measuring More Than Yield
Traditional coffee production often focuses on volume.
We believe the future should measure much more.
Our monitoring combines ecological assessments, soil analysis, biodiversity observations, harvest tracking, traceability, and internationally recognised specialty coffee cupping evaluations.
Coffee quality is assessed using professional cupping protocols that evaluate fragrance, flavour, aftertaste, acidity, body, balance, sweetness, clean cup, uniformity, and overall quality. Coffees scoring above 80 points are recognised as specialty coffee, while scores above 85 are considered exceptional.
Early results are encouraging.

Our regenerative coffees from Mount Batukaru have already achieved specialty-grade scores:
Arabica: 84.5 points.
Robusta: 82.75 points.
These results suggest that regenerative production can deliver environmental benefits and coffees capable of competing in premium specialty markets.
From Commodity to Conservation
Perhaps the greatest opportunity lies not only in producing better coffee but also in changing the economics of conservation.
If rainforests can generate greater long-term value through premium biodiversity-linked coffee than through deforestation, forests become more valuable alive than cleared.
This creates powerful incentives for local communities to protect biodiversity while improving livelihoods through transparent, traceable value chains.
Coffee then becomes more than a crop.
It becomes a mechanism for restoration.
In many ways, the future of coffee grows in the rainforest.

The coffee industry faces enormous challenges.
Climate change is already affecting yields. Climate extremes are becoming more common. Farmers face increasing uncertainty while forests continue to disappear.
But these challenges also create an opportunity to rethink how coffee is produced.
Imagine coffee farms that restore wildlife habitat rather than destroy it.
Imagine consumers whose daily cup contributes directly to rainforest conservation.
Imagine biodiversity becoming one of coffee's greatest quality indicators.
That future may be closer than we think.
The next revolution in coffee might not come from a new processing technique or roasting profile.
It might come from something much older:
The rainforest itself.
